How To Make Turkuaz Kitchen Brown Butter Gnocchi

  1. Prepare the Potatoes: In a large pot, boil the potatoes until tender or bake them in the oven preheated to 400°F (200°C). If baking, place the potatoes on the middle rack of the oven and bake for 40-45 minutes until fork-tender.
  2. Cool and Rice the Potatoes: Let the potatoes cool until they are easy to handle. Remove the skins and press the potatoes through a potato ricer onto a work surface. Let the riced potatoes cool for 10-12 minutes.
  3. Make the Dough: Add the egg yolks, salt, and pepper to the riced potatoes. Sprinkle the flour over the mixture. Using a bench scraper or your hands, fold and press the mixture until the dough comes together. Avoid kneading the dough. If the dough is sticky, add more flour as needed.
  4. Shape the Gnocchi: On a lightly floured surface, divide the dough into 4-6 equal pieces. Roll each piece into a 1/2-inch-thick rope and cut it into 3/4-inch-long pieces. Using a fork or a gnocchi board, slide each piece to create ridges. Sprinkle the gnocchi with a little bit of flour and let them rest for 10 minutes.

Important Note:
