This easy Chicken Parmesan makes a tasty dinner that takes about 45 minutes to prepare and serves up to 4 people.

For The Tomato Sauce:

  • 2 Tablespoons Olive Oil
  • 1 Medium Onion, Chopped
  • 2 Cloves Minced Garlic
  • 1 Can (28 Ounces) Crushed Tomatoes
  • 1 Teaspoon Salt
  • 1 Teaspoon Dried Oregano
  • 1 Teaspoon Dried Basil
  • 1 Teaspoon Sugar
  • ½ Teaspoon Garlic Salt
  • As Needed Water Or Chicken Broth

For The Chicken:

  • 2 Large Chicken Breasts, Sliced Into Thin Filets
  • 1 Teaspoon Salt (½ Tsp For Seasoning Chicken, ½ Tsp For Eggs)
  • 1 Teaspoon Black Pepper (½ Tsp For Seasoning Chicken, ½ Tsp For Eggs)
  • 1 Cup Bread Crumbs
  • 2 Eggs, Beaten
  • 1 Cup All-purpose Flour
  • ½ Teaspoon Garlic Salt

For Frying:

  • Enough To Fill The Pan About 1 Inch Deep Oil For Frying

For Baking:

  • 2 Tablespoons Per Large Piece Shredded Parmesan Cheese
  • As Needed Mozzarella Cheese, Slices, Or Shredded
  • As Needed Fresh Basil
  • For Drizzling Olive Oil

How To Make Turkuaz Kitchen Chicken Parmesan

  1. Make the Tomato Sauce: Heat a medium saucepan over medium heat. Add olive oil and onion and sauté for 4-5 minutes until softened. Add minced garlic and cook for 1 more minute. Add tomatoes, salt, oregano, basil, sugar, and garlic salt. Continue to cook for 2-3 minutes, stirring occasionally, until everything comes together. Add water or chicken broth, stir together, and turn to medium-low heat. Cook for 15-20 minutes until the onions are fully cooked and the sauce reaches your preferred texture, adding additional chicken broth or water as necessary. Remove from heat and set aside.
  2. Prepare the Chicken: Using a sharp knife, slice the chicken into thin filets. You can also cut the filets in half if you prefer. Place the chicken on a work surface and cover with parchment paper. Pound the chicken with a meat tenderizer until it’s about ¼” thick. Remove the parchment paper and sprinkle each side with salt and pepper. Let rest for 10-15 minutes.
  3. Bread the Chicken: In three shallow bowls, place bread crumbs, eggs, and flour. Beat ½ tsp salt and pepper into the eggs and mix ½ tsp garlic salt into the flour. Place the first piece of chicken into the flour mixture and coat well. Then dredge with the egg mixture coat well, and then coat fully with the breadcrumbs. Place the breaded chicken breast onto a wire rack and repeat until each piece of chicken is coated.
  4. Fry the Chicken: Heat 1 inch of oil in a large pan over medium-high heat. Carefully place a piece of chicken into the hot oil and fry for 3-4 minutes on each side until lightly browned and crispy. Remove onto a clean cooling rack and repeat with each piece of chicken, maintaining the oil level with additional oil and letting it heat before cooking the next pieces.
  5. Bake the Chicken: Preheat the oven to 450°F. Place the chicken breasts onto a baking sheet and cover each with tomato sauce. Top large pieces with 2 tbsp of shredded parmesan or less as needed, and layer with mozzarella and fresh basil. Drizzle lightly with olive oil. Bake for 8-10 minutes until the mozzarella is melted and lightly browned. Remove from the oven and serve with pasta or as a sandwich.
