How To Make Turkuaz Kitchen Chocolate Brioche Bread

  1. Activate the yeast: In a bowl, whisk together 1/4 cup warm water, yeast, and a pinch of sugar. Let it rest until fluffy for 5-7 minutes.
  2. Mix the dough ingredients: In a large bowl of a stand mixer or in a large bowl, combine flour, milk, sugar, salt, eggs, and the foamed yeast. Mix until combined for about 3-4 minutes. Cover with a cloth or plastic wrap and let it rest at room temperature for 8-10 minutes.
  3. Knead the dough: Knead the dough with a stand mixer or hand. Add room-temperature butter to the dough and continue to knead for 12-15 minutes.

  5. Shape the dough: Place the dough onto a lightly floured surface and divide it into two equal pieces. Using a rolling pin or your hands, roll out each piece into a small rectangle. Add chocolate chips, then fold and shape the dough as shown in the IG Reel. Using a sharp razor blade, cut around the dough horizontally as shown in the IG Reel. Repeat these steps with the other piece.
  6. Second rise: Transfer the bread onto baking sheets lined with parchment paper. Cover with a kitchen towel and let rest for 40-50 minutes at room temperature.
  7. Preheat the oven: Preheat the oven to 350°F (175°C).
  8. Prepare egg wash: In a small bowl, beat the egg and oil together. Brush each bread with the egg wash.
  9. Bake the bread: Bake for 25-30 minutes until golden brown.
  10. Cool and serve: Remove the breads from the oven and place them on a cooling rack. Allow them to cool slightly before serving warm.
