How to Make Turkuaz Kitchen Cinnamon Buns

  1. Prepare Yeast Mixture: In a bowl, whisk together 1/2 cup warm milk, yeast, and a pinch of sugar. Let it rest until fluffy, about 5-7 minutes.
  2. Mix Dough Ingredients: In a large bowl or stand mixer, combine flour, remaining milk, sugar, salt, egg, cardamom, and the yeast mixture. Mix until combined, about 3-4 minutes.
  3. Initial Rest: Cover the bowl with a cloth or plastic wrap and let it rest at room temperature for 10-12 minutes.
  4. Knead the Dough: Knead the dough by hand or with a stand mixer. Add room-temperature butter to the dough and continue to knead for 12-15 minutes.
  5. Refrigerate Dough: Cover the dough with plastic wrap and refrigerate overnight. If short on time, refrigerate for about 3 hours.
  6. Prepare Filling: In a medium bowl, whisk together butter, sugar, and cinnamon until smooth.
  7. Shape the Buns: Turn the dough out onto a floured surface and divide it into two equal pieces. Roll each piece into a ball.
  8. Roll Out Dough: Using a rolling pin, roll out each ball into a rectangle about 1/2 inch (2 cm) thick. Spread the cinnamon mixture on top using a spatula. Fold the dough into three layers and cut into 1-inch wide slices using a pizza cutter. Twist each slice and form into knots with the ends tucked under, as shown in the IG reels.
  9. Second Rise: Place the buns on baking sheets lined with parchment paper. Cover with a clean kitchen towel and let rest for 30-40 minutes at room temperature.
  10. Preheat Oven: Preheat the oven to 450°F (232°C).
  11. Apply Egg Wash: In a small bowl, beat together the egg and milk. Brush each bun with the egg wash.
  12. Bake the Buns: Bake for 8-9 minutes until golden brown. Remove from the oven and transfer to a cooling rack to cool completely.
  13. Optional Glaze: If desired, brush the buns with caramel syrup. Serve with hot coffee and enjoy!

Recipe Tips

  • Check Yeast Freshness: Use fresh dry yeast. Let it foam in warm milk with a little sugar before adding it to the dough. This helps the buns rise well.
  • Knead Well: Knead the dough for 12-15 minutes to make it soft and fluffy. If using a mixer, use the dough hook at medium speed.
  • Chill Overnight: Let the dough rest in the fridge overnight. This makes the buns taste better and the dough easier to shape.
  • Spread Filling Evenly: Spread the cinnamon mixture evenly on the dough. This gives every bite a good taste of cinnamon and sugar.
  • Watch Baking Time: Bake the buns until they are golden brown, about 8-9 minutes. Don’t let them overbake or they will be dry. Take them out as soon as they are lightly browned.
