How To Make Turkuaz Kitchen Potato Winter Pizza

1. Preparing the Dough:

  1. In a medium bowl, add 1/2 cup warm water, yeast, and a pinch of sugar and let it rest until fluffy for 5-7 minutes.
  2. In a large bowl, add the flour, remaining water, foamed yeast, oil, remaining sugar, and salt and stir. Knead the dough for about 4-5 minutes.
  3. Cover the dough with a clean kitchen towel or plastic wrap and let it rest for 15-20 minutes.
  4. Punch it down and knead it a little bit to release the air from the dough. Repeat this process two or three times. (This process is the secret to the soft and fluffy dough! If you have questions, check out the “Pizza Dough Recipe” for more detailed steps.)
  5. Cut the dough into 3-4 equal pieces and shape them into a ball.
  6. Place it on a heavily floured surface, cover it with a clean kitchen towel, and let it rest for 1-2 hours at room temperature.

2. Preparing the Crispy Potatoes:

  1. Preheat the oven to 450°F (230°C).
  2. In a medium pan, add the potatoes then top with cold water, salt, and baking soda. Bring to a boil over medium-high heat. Cook them until a knife slides easily to the center.
  3. Drain the potatoes and transfer them onto a baking sheet. Sprinkle with salt and pepper.
  4. Using a small bowl, smash the potatoes gently. Drizzle with olive oil. Roast until the potatoes are golden brown.

3. Preparing the Pizza:

Recipe Tips

  • Warm Water for Dough: Make sure the water is warm (not hot) when you mix it with yeast. This helps the dough rise well.
  • Knead Dough Well: Knead the dough for at least 4-5 minutes. This makes the dough stretchy and chewy.
  • Rest Dough Enough: Let the dough rest and rise at room temperature for 1-2 hours. This step makes the crust soft and fluffy.
  • Smash Potatoes: Gently smash the cooked baby potatoes before roasting. This makes them extra crispy in the oven.
  • Don’t Use Rolling Pins: Stretch the dough by hand instead of using a rolling pin. This keeps the air bubbles in the dough, making the pizza lighter.

What To Serve With This Crispy Pizza

Serve this crispy potato winter pizza with a fresh arugula salad, drizzled with lemon vinaigrette, and a side of roasted vegetables. For a refreshing drink, try a chilled glass of sparkling water with a splash of lemon.

How To Store Leftovers

Store any leftover pizza in an airtight container in the refrigerator. It will stay fresh for up to 3 days.

How To Reheat Leftovers

To reheat the leftovers, preheat your oven to 375°F (190°C). Place the pizza slices on a baking sheet and cover with aluminum foil. Bake for 10-12 minutes or until heated through.

Avoid using the microwave, as it can make the pizza soggy.
