How To Make Turkuaz Kitchen Mushroom Mint Pasta

  1. Prepare the Dough: Place the flour on a work surface and add salt and sugar. Make a well in the center. Add the egg yolks, egg, and lemon juice to the well. Using a fork, pierce the egg yolks and whisk. Gradually incorporate the flour into the egg mixture by moving your fork around the well and rolling up the dough. Drizzle oil on the dough surface and knead for 5-6 minutes until elastic and no longer sticky. If too dry, add 2-3 tbsp water. Add chopped mint and parsley, kneading until well combined. Wrap the dough with plastic wrap and let it rest for 15-20 minutes at room temperature.
  2. Shape the Pasta: Divide the dough into 4 equal pieces and roll each through a pasta roller. Dry the pasta sheets on a drying rack or a clean chair back for 15-20 minutes. Cut the sheets into desired shapes using a pasta cutter or any cutter. Sprinkle with extra flour and let the pasta rest for about 20 minutes to dry slightly.
  3. Cook the Pasta: Bring a large pot of salted water to a boil. Cook the pasta until al dente, about 6-7 minutes. Drain and reserve 1/2 cup of boiling water.
  4. Prepare the Sauce: In a large pan over medium heat, add butter, olive oil, and grated shallots. Cook until the shallots are soft. Add mushrooms and cook until golden. Stir in the cream, parmesan, salt, and pepper. Simmer for 1-2 minutes. Add the drained pasta and reserved boiling water. Stir to combine. Remove from heat.
  5. Serve: Transfer to a plate and garnish with parmesan and fresh greens. Enjoy!

Recipe Tips

  • Don’t Overknead the Dough: Knead until the dough is smooth and stretchy. Too much kneading makes it hard.
  • Rest the Dough Well: Let the dough rest for at least 20 minutes. This helps in rolling and shaping.
  • Cook Mushrooms Well: Make sure mushrooms are golden and fully cooked before adding cream. This makes them tastier.
  • Save Pasta Water: Keep some pasta water when you drain it. Adding it to the sauce makes everything mix well and taste better.
